I've had a stoma since May 2018 and also struggled at first. However, I found that if I followed my normal diet I could cope. Can't eat certain things, like nuts, apple skin, etc., but can eat most other things in small amounts. Over the first 6 months kept a food diary showing what I ate and the resultant changes to my poohing. But in the end decided life was too short. Eat small meals and often. CHEW CHEW CHEW. You will get to know what you can and can't eat. I missed mushrooms, so my partner uses an electric food 'mincer' to reduce them to a pulp to add to food. Good luck.
