Dear Chelsea I am new to this forum but hope this helps. If your mum has difficulty swallowing too, you may get advice from Speech and Language Therapy about an appropriate soft diet. If the soft diet has been recommended because of the bowel resection, a Dietitian would be able to advise on appropriate soft foods. I have stomach cancer and a duodenal stent, so was advised to be on a soft diet. I started with lots of soup, stewed apples, yoghurt, ice cream, fish, pasta, omelettes, really well cooked shepherd's pie, mashed potatoes, etc. If her favourite food is too difficult to digest, try using a food processor to break it up into smaller pieces. But my main recommendation is fresh soup, either home made or shop bought. It's very nutritious and tasty. You can add things to bought soup to make it more enjoyable. Basically a soft diet is anything that slips down and doesn't require a lot of chewing. I eat chicken that has been cooked really well, but I never attempt red meat. I haven't had any problems, but my tumour is higher up the digestive tract.i hope this helps.
