Hi there, sorry about your dad.my partner is almost finished treatment for nasal cancer and is only managing ensure drinks mostly  due to sore mouth.

I make him soups ans add double cream for extra calories. He also managed some pasta the other day. I add lots of butter. Scrambled eggs are good aswell with grated cheese. It must be so difficult so eat with the pain and lack of appetite. Good luck
